No Turkey Left Behind

Thanksgiving is one of my favorite holidays- mainly because Thanksgiving is a day of cooking and, more importantly, eating. In all seriousness, I love that the focus of this holiday is enjoying a big meal with family and close friends.  We spent this Thanksgiving with our new LA friends and we had a fantastic day. We enjoyed turkey, stuffing, cranberries, mashed potatoes, sweet potatoes with mascarpone, cornbread casserole, kale, pumpkin pie, apple crisp, and pecan pie. There was more than enough food and wine, and we even found some time for games. We also made sure to go around the table and talk about what we are thankful for.  Of course, I said I was thankful to have made such great friends in LA and for my husband for helping me prepare all the food.  I tried to capture some of the highlights.


 
 
On Friday, we relaxed and then… we ate some more! We cooked a 15 lb bird so we were determined not to let it go to waste.  We made some killer turkey sandwiches on country white bread.  You just spread the bread with mayo and load on the stuffing, cranberries, turkey and gravy!  A carb lovers dream sandwich and in my personal opinion, it’s truly the best way to enjoy leftover turkey.  For dinner, you guessed it, leftover turkey!

We switched gears on Saturday and decorated the house for Christmas.  I can’t believe it’s almost December!  We took a break from turkey and we enjoyed some steaks and twice baked potatoes.  We also made our first fire in our fireplace. 

Believe it or not, there is leftover turkey still lingering in our fridge so I am making turkey enchiladas for dinner tonight. It was a great weekend and I have really enjoyed all tof he tasty turkey, but I am hoping that by Monday all of the turkey will be gone!

  1. You really are the hostess with the mostess! Your Thanksgiving meal looks delicious and I'm sure you all had a blast. And I LOVE your tree. So pretty!!!

  2. I totally agree with Laura - such a great hostess! I'm still craving your cornbread casserole! Your fireplace lit up looks so cozy. Happy Monday!

  3. Thanks Laura! And believe it or not, Tess, we still have cornbread casserole left! All the leftovers are going in the garbage today - I am moving on. ; )
